Adam's Apple BBQ SauceExpect this Sauce to have a great flavor coming from fresh minced apples. We have combined this flavor with our Original sauce with other spices to give the ultimate in a down home sweet bbq sauce.
Smokin Brothers Original BBQ SauceThis sauce has a sweet start with an added kick to finish. Original is great to glaze on the last 15 minutes of grilling for an added flavor to your entree.
Butt The Kitchen SinkThis seasoning is an all purpose seasoning that gives you the flavor of a sweet bbq. Great on anything you can think of and can be added to any marinade to add a great bbq flavor.
Plus The Kitchen SinkThis seasoning is for those that like a little kick in their bbq. We use this especially on baby back ribs but have customers that have used it even on scrambled eggs.
3 cups Apple Juice (not from concentrate)
1 cup Honey
Plus Kitchen Sink
Cracked Pepper and Sea Salt
One flank of salmon or 6 salmon fillets
Start your grill. Whisk the Apple juice and honey together in a large bowl. Take the salmon out of the package and rinse the salmon off under cold water. Pat the salmon dry with a towel. Dredge the salmon through the mixture several times. Now you can rub a little olive oil on the side of the salmon that will be placed on the grill (the scale side is suggested). The seasoning is can be optional but a light sprinkle of everything makes for a deliscious flavor.
Place the grill on 275. Place the salmon on the grill and close the lid. When the internal temperature of the salmon is over 155 (usually about 40 minutes but will vary on the size of the salmon) remove the salmon and serve.
Smokin Brothers, A Family Tradition
1/2 cup Plus the Kitchen Sink
2 tbsp Sea Salt
2 tbsp Cracked Pepper
One whole Beef Brisket (point and all)
One Large Aluminum Foil Steam pan
Remove the brisket from the packaging. Rinse the brisket thoroughly under cold water. Pat dry with a paper towel. Trimming of the brisket may need to be done if you have more than 3/8" of fat on the top of the brisket. Strat on the oppiste side of the fat cap. Take about a 1/4 cup of Plus and sprinkle evenly over the brisket. Then take 1 tbsp of the Sea Salt and cracked pepper and spread over the brisket as well. Now press the seasoning into the beef. Do not rub because this will cause the seasoning to gather in one spot. Let stand for 15 minutes. Now turn the brisket over and repeat the step on the fat cap side. At this point start your grill. After the grill has lit turn the grill to 180. Let the brisket sit for 30 minutes after the final seasoning.
Place the brisket on the grill with the fat side up. Cook at 180 for 4 hours then turn the grill to 225. When the internal temperature of the brisket reaches 160 (usually about 6 hours from the starting point) take the brisket and place in the pan with the fat cap up. Wrap tightly in foil and place back on the grill and turn the grill to 250. When the internal temperature of the brisket passes 190 remove the brisket from the grill. Usually this will happen 2 hours after wrapping the brisket. Place the brisket in a controlled enviroment for resting time. This could be an oven that is not turned on, a cambro (a cooler designed for heat) or a cooler lined with newspaper to help absorb the moisture in the air from the brisket. The resting time should be for a minimum of 15 minutes. Now it is time to serve. There is a thin line of fat that separates the point form the flat, this is easily found by lifting up on the point. Follow the line of fat and cut the point off. Now take the flat and slice against the grain starting with the tip of the brisket. The point can be used for pulled brisket. Now sit back and enjoy.
